Thumbprint Cookies

This classic holiday treat never fails to make people smile. My favorite aspect about these cookies is that they are so customizable! Use any jam flavor you like, add citrus zest to the dough, drizzle icing on top–the options are endless! Turn on the holiday music and let's get baking!

Prep time: 30 mins | Cook Time: 20 mins | Total time: 50 mins

Yields about 45-50 cookies

Ingredients  â€‹

  • 0.5 tsp baking powder

  • 1 large egg (at room temperature)

  • 2 tsp pure vanilla extract

  • 1 cup white sugar

  • 1 cup salted butter (softened at room temperature)

  • 2.5 cups all-purpose flour

  • 1 cup jam/jelly/preserves (any flavor you want!)

Steps

  1. Preheat your oven to 325°F. Cream together butter, sugar, and baking powder until the mixture is light and fluffy, about 3 to 4 minutes.

  2. Add egg and vanilla extract and mix until everything is combined.

  3. Gradually add flour. Mix until the ingredients are just barely combined to avoid overworking the dough, which can make the cookies tough.

  4. Chill dough in the fridge for about 30 minutes before shaping the cookies.

  5. Roll the dough into 1 inch balls and place them at least 1 inch apart on a baking sheet.

  6. Make an indentation in the center of each ball using your thumb or a rounded tool.

  7. Fill each indentation with your choice of jam/jelly/preserves.

  8. Bake for about 20 minutes. Rotate the baking sheet halfway through. Allow the cookies to cool for a few minutes on the pan before moving to a wire rack.

  9. Enjoy!
