Chicken with Garlic Parmesan Spaghetti 

Some nights, dinner just feels like going through the motions — boil pasta, dump on sauce, call it a day. But why should spaghetti night be stuck on repeat? In my kitchen, I like to take those “blah” dinners and give them a little glow-up, something that feels special without requiring a culinary degree or two hours over the stove. This Chicken with Garlic Parmesan Spaghetti is exactly that: juicy, golden chicken served over silky pasta tossed in buttery garlic and plenty of Parmesan. It’s comfort food with a little flair, the kind of meal that makes you feel fancy while still wearing your comfiest sweatpants. The best part? It’s quick enough for a Tuesday but delicious enough to serve when you’ve got friends coming over. So grab your skillet, pour yourself a glass of something you love, and let’s turn “just spaghetti” into something worth talking about.

Prep Time: 10 mins | Total Time: 40 mins 

 

Ingredients ​ 

  • 10 oz cherry tomatoes

  • 4 cloves of garlic

  • 12 oz of spaghetti

  • ½ cup Parmesan

  • ½ block of cream cheese

  • 20 oz Chicken Breast

  • Seasoning: 4 parts dried basil, 2 parts rosemary, 2 parts oregano, 2 parts garlic powder, 1 part cayenne pepper 

 

Steps​​

  1. Mix all your seasonings together in a small bowl. If you have any left after the meal, save it in a small container and use for other meals!

  2. Preheat oven to 400°. Bring a large pot of water to boil.

  3. Slice tomatoes into halves or quarters, depending on their size. Place on a baking sheet, drizzle with oil and season with 2 tsp of your seasoning, salt and pepper. Roast on middle rack until tomatoes have wilted slightly and garlic is softened, 20-25 minutes.

  4. Once water is boiling, cook spaghetti according to the box (al dente). Reserve 1½ cups of past water then drain.

  5. Pat chicken dry with paper towels. Season with 2 tsp of your seasoning, salt and pepper. Heat a large drizzle of olive oil in a large pan over medium-high heat. Add chicken and cook until browned and cooked through

  6. In the same pot you used for the pasta: Melt 1 TBSP butter over medium heat. Add garlic and 1 tsp seasoning. Stir in cream cheese, Parmesan, 1 cup reserved pasta water, and 3 TBSP butter until melted and combined. Turn off heat; season with salt and pepper.

  7. Transfer chicken to a cutting board; slice crosswise. Add spaghetti, sliced chicken, and tomatoes to pot with sauce; toss to thoroughly combine. (TIP: If needed, stir in more reserved cooking water a splash at a time until pasta is coated in a creamy sauce.)

  8. Enjoy and don’t forget to add extra parmesan to your bowl!
